3 Simple Vegan Breakfast Ideas

3 Quick and Easy (and Some Not So Quick, But Still Easy) Breakfast Ideas

If you are anything like me, some days you wake up in the morning from an amazing sleep and feel the inspiration to create a mouthwatering breakfast coursing through your veins. However, this requires a 110% can-do attitude.

On the other hand there are those mornings that we all know too well.. The old, “I stayed up until 2am watching YouTube breakfast videos and stalking through my breakfast board on Pinterest so that I can be inspired in the morning to make something amazing.. but, now I just want to eat last night’s leftover pizza and a Coke” sorta mornings.

These mornings require you to eat copious amounts of the closest and quickest thing you can grab. Lucky for you I’ve got the next few mornings covered with 3 easy VEGAN breakfasts.


1) Apple and Agave Steel Cut Oatmeal

Preparation time: 2 minutes

Cooking time: 5 minutes

Cannot be bothered level: 3

Here is what you will need:

  • One cup of steel cut oats
  • Two cups of almond milk (any plant based milk will do)
  • One apple
  • Two tablespoons of Agave nectar or rice syrup
  • Toppings of your choice (I love frozen mango and berries)


  • Boil the kettle and pour boiling water onto oats in a pan
  • Add cubes of apple
  • Heat on low until water had been soaked up
  • Add one of the tablespoons of agave
  • Continue to heat on low until cooked
  • Add into a bowl and place on additional toppings
  • Drizzle over the agave and hey presto you have yourself a warm hug in a bowl!


2) Banana Ice Cream

Preparation time: 30 seconds

Cooking time: 2 minutes

Cannot be bothered level: 7

Here is what you will need:

  • 4 large frozen bananas
  • One cup of frozen berries
  • A handful of spinach (all you green haters out there can skip this part)
  • Fruit and/or other toppings (I like to use rice puffs, quinoa cereal and coconut)


  • This works best when the bananas are semi frozen! So if you can try to thaw them out a little before blending
  • Add bananas to blender
  • Add berries
  • Add spinach
  • Blend it all up!
  • Add toppings. Wow.. that’s literally all you need to do, how easy right! Cleaning up is the tough part so good job for making it this far


3) Ahh the final recipe, I have indeed saved the best till last..

Vegan Chocolate and Banana Pancakes

Preparation time: 5 minutes

Cooking time: 10 minutes

Cannot be bothered level: 1 (this one’s for you breakfast enthusiasts)

Here is what you will need:

  • One cup of oat flour (any flour will do, preferably not white)
  • Three brown bananas
  • Two tablespoons of agave nectar
  • Half a cup of desiccated coconut
  • Berries and/ or fresh fruit
  • Cacao powder
  • 1 cup of almond milk


  • Blend together dry ingredients e.g flour and coconut
  • Mash bananas with a fork in a bowl until smooth
  • Add in agave and cacao powder
  • Mix in almond milk
  • Combine all ingredients together in the blender and blend until smooth
  • Heat in frying pan until bubbles pop up on the corners of the pancake (come on I know you know how to make pancakes)
  • Finally add your toppings and make sure to take a pictures, your hard work deserves at least one like on Instagram right?
