Perfectly summery vegan recipes

Okay, it’s the UK so it’s not really summer… but that doesn’t mean our food can’t be a bit more colourful and fun, right?? Here are 5 great vegan recipes by 5 great chefs to cheer up the gloomiest of summer days or take center stage at the BBQ.

Cream Cheeze Taquitos by Contentedness Cooking

These Mexican inspired taquitos are the perfect starter dish or light bite.

Here’s what you need:

  • 110g of vegan cream cheese
  • 1 can of black beans
  • 1/2 cup of nutritional yeast
  • 6 cloves of garlic (minced)
  • salt and pepper to season
  • Tortilla wraps

And here’s what you’ll need to do:

  1. Combine all your ingredients in a bowl and mash with a fork until you have a smooth mix
  2. Add about 2 tbsp to each tortilla and roll tightly
  3. Place the tortillas in a baking dish and lightly brush them with olive oil
  4. Bake at 200C for 15 minutes


Spicy Vegan Black Bean Burgers by KaleInIt

Here’s what you need:

  • 1 1/2 cups of black beans
  • 1/2 cup of panko breadcrumbs
  • 1/4 rolled oats
  • 1 small white onion
  • 1/2 cup of red or orange bell pepper (diced)
  • 1/2 jalapeño (seeds removed)
  • 3 spring onions
  • 1 flax egg (1 tbsp ground flax seed and 3 tbsp water)
  • 2 tablespoons of ketchup
  • Juice of 1 lime
  • 1/4 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to season

And here’s what you’ll need to do:

  1. Preheat oven to 180C and spray a baking sheet with nonstick cooking spray
  2. Prepare the flax egg by stirring 1 tbsp ground flax with 3 tbsp water
  3. Chop jalapeño, bell pepper, scallions and onion then add to a large bowl
  4. Add all other ingredients into the bowl, including flax egg, and stir well until burger base is formed
  5. Use your hands to form patties with the black bean base, about 6-8 large patties and place on baking sheet
  6. Bake for 20 minutes, flip, and cook for another 20 minutes until outside of burgers are crispy and golden


Watermelon Gazpacho by Happy Kitchen Rocks

Here’s what you’ll need:

  • 400g of tomatoes
  • 1 red bell pepper
  • 1/2 cucumber
  • 600g of watermelon
  • 2 cloves of garlic
  • 3 tbsp of basil
  • Juice of 1 lime
  • 2 tbsp of white wine vinegar
  • 3 tbsp olive oil
  • Salt and pepper to season

And here’s what you’ll need to do:

  1. Chop the tomatoes, pepper, cucumber, watermelon, garlic, and basil and add to a food processor
  2. The add the lime juice, vinegar, olive oil and salt a pepper and blend again
  3. Garnish with basil leaves and serve with grilled ciabatta


Healthy Pineapple Ice Cream by Vanillacrunch

Here’s what you need:

  • 2 frozen bananas
  • Handful of frozen pineapple chunks
  • 3 tbsp maple syrup (not necessary if bananas are ripe and sweet enough)
  • Optional: 1 tsp turmeric for an extra kick!

And here’s what you’ll need to do:

  1. Put everything into a blender and blend!
  2. Eat immediately or freeze for later
